The Ridgeview Cavendish is a blend of mainly Pinot Noir and Pinot Meunier, plus Chardonnay, handpicked and whole-bunch-pressed with 100% malolactic. With a fine, vibrant mousse, it has a well-defined yet subtle bouquet with enticing scents of lemon thyme, biscuit and hints of acacia that are very Champagne-like. The palate does not disappoint; it is extremely well balanced, delivering razor-sharp acidity and a tension-filled, persistent finish. A touch of red berry pops up on the aftertaste. This is a sparkling wine that is all about nuance rather than overt flavors. Superb.
