Pandorga is 100% Pedro Ximénez from a single vineyard “La Panesa” in the Pago de Carrascal, grown on Albarizas de Barajuelas facing west. The grapes are handharvested before becoming overripe, sun-dried by the Asoleado method until they lose half their initial volume (10 days), then pressed whole-cluster into an old 500L Jerez bota for spontaneous fermentation without temperature control, and raised in bota for 12 months before being bottled with a light filtration. With only 15% of the original harvest yielding juice for the wine and 5.75 ABV, this is one of the most unusual and fascinating sweet wines we've ever had from Spain, offering notes of marmalade balanced by refreshing acidity
COTA 45 Description
Just as Ramiro Ibáñez revived the vino de pasto style in his white wines, here with the Pandorga dessert wines, another method from the early nineteenth century is employed. Organic grapes that, once harvested, are spread out on the pasera, a special site set aside for drying, to dry in the sun for 7 days. They are then pressed and, the next day, spontaneous fermentation begins in barrels for a couple of months without temperature control until it naturally comes to an end. For the red, Tintilla de Rota is used and for the white, Pedro Ximenez.
