Made from a blend of 80% Flora and 20% Muscat de Alexandria. It is considered non-vintaged as it is a blend from the 2016, 2017, and 2018 vintages. Since it is a blend across multiple vintages, a batch is made every two to three years.  The fruit for the vermouth is harvested when some botrytis is present and as the grapes begin to raisin. This allows for the necessary sugars to be present for the sweet style vermouth. Whole cluster fermentation takes place and it is allowed to stop naturally. The grapes are then pressed into partially full used barrels for a period of time. They vintages are blended and an infusion of bloood orange, sour cherry, corriander, cardoon, and chichchona bark is added to the mix before final bottling. Makes for a great addition to a Boulevardier, Blood and Sand, Negroni, Manhattans, and on its own as an apertif.

First off, our vermouth is primarily about the wine. The base wine. It is 80% Flora, which is a variety bred at UC Davis by the legendary Harold Olmo back in the 1950’s. Flora is a cross between Semillon and Gewurtztraminer Though Olmo isn’t with us any more to confirm our theory, our conviction is that he bred it specifically for fortified wines. The California industry moved away from these types of wines and Flora fell into obscurity. When we heard that Flora still existed in the organically farmed Yount Mill Vineyard we immediately begged for some fruit. This fruit is a rare exception for us—normally we try to grow all of our own fruit—but the temptation to make wine from this rare and historical variety was too much to resist.
