Sourced from 50-year old parcels in Amandi and is 80% Mencia. Fermented in wooden vats and aged in a combination of vats and barrels. This is a lively expression, with cherry candy, pomegranate and a reductive touch. The palate is intense, with a soft grip and flavorful fruit, showing the classic fruit-driven style of Ribeira Sacra with a tighter finish.
Hand harvested and fermented with native yeasts on the skins in used French oak vats with about 60% stem inclusion for 45 days. After fermentation, the wine was racked to 500L used French oak barrels and 5000L foudres, where it is rested for 10-12 months. No fining, filtering and minimal sulfur.
The Guimaro family has been making wines in Amandi, mostly from estate vineyards. The single-vineyard wines are particularly impressive. Guimaro is one of Ribeira Sacra's benchmark producers.
