Champagne Ayala Description

Ayala is one of the most exciting stories in Champagne today — the definition of a boutique Champagne producer. Independently owned, a small, young and dynamic team handles every step of production from grape reception to labeling in their jewel of a facility with incredible precision, crafting Chardonnay-focused wines that deliver immense pleasure, freshness and elegance.

Ayala’s Brut Nature is a zero-dosage Champagne that is aged for nearly four years. It reveals elegant complexity, with extended autolysis highlighting the exceptional quality of grapes from Champagne’s best crus. The blend features primarily Chardonnay, with Pinot Noir and a touch of Pinot Meunier for balance.

Tasting Note: Its bright gold color leads to a fine nose of citrus and subtle saline notes. On the palate, it is clean and complex, offering dry mineral flavors and vibrant grapefruit and white fruit, all while maintaining freshness and tension.

Wine Spectator: 92 Points

This aromatic Champagne shows lovely balance. Firm and fresh yet fine and lacy in texture, with crunchy white peach, pineapple, grapefruit zest, biscuit, lemon curd, grated ginger, floral and herb notes expanding nicely through the chalky finish. Chardonnay, Pinot Noir and Pinot Meunier. 

James Suckling: 92 Points

A well-rounded, balanced and seductive brut-nature blend of 55%Pinot Noir and 15% Pinot Meunier. On the nose it shows aromas of sliced apples, pears and cinnamon. Round and juicy with medium bubbles and a dry yet fruity and comforting finish.

Vinous: 90 Points

The NV Brut Nature is a rich, heady Champagne with terrific balance and tons of character. Orchard fruit, dried flowers, chamomile and spice are some of the many aromas and flavors that gradually take shape in the glass. This release is a blend of 55% Chardonnay, 30% Pinot Noir and 15% Meunier, vintages 2019 to 2016. No dosage style yields a Champagne that is naturally a touch stark, but it works quite well here because of long aging on the lees and the blend of vintages going back to 2016.
