A rather lean, racy, elegant wine that plays down the butter and toast qualities and brings out the variety's notes of lemon curd, lime zest, cream and minerals on a vivid, tangy texture. Technically full-bodied, but it feels light and very well balanced. Drink now or hold
Alma de Cattleya Description
The fruit for our Chardonnay is grown in vineyards between the Russian River and the Sonoma Coast. The coastal influence provides the right balance of acidity, texture, softness, and length. Fruit is harvested by hand at night and is immediately taken to the winery for gentle pressing. The juice is transferred to both neutral barrels and new barrels after settling overnight to start its fermentation. The wine is then aged in neutral barrels and stainless steel tanks for 11 months before going to bottle.
These Chardonnay grapes were grown along the rolling hills of Sonoma County vineyards. The cold, foggy mornings slowly ripened the grapes, capturing the essence of this varietal: great texture, intense fruity aromatics, and ample acidity.
